Hope it works well for you guys too.Our Favorite White Bread-from Bob's Red Mill-for bread machine WET INGREDIENTS: 3 lg eggs 1 tsp cider vinegar 1/4 cup canola oil 1-1/2 cup water* DRY INGREDIENTS: 2 cups white rice flour** 1/2 cup potato starch** 1/2 cup tapioca flour** 1/3 cup cornstarch 1 tbsp xanthan gum 3 tbsp sugar 1-1/2 tsp salt 1 tbsp egg replacer, optional (I leave this out-I don't keep it around) 2/3 cup dry milk 2-1/4 tsp active dry yeast*** Combine wet ingredients; pour carefully into baking pan. Measure dry ingredients; mix well to blend. Add to baking pan. Carefully seat pan in breadmaker. Select Normal/White cycle***; start machine. After mixing action begins, help any unmixed ingredients into the dough with a rubber spatula, keeping to edges and top of batter to prevent interference with the paddle. Remove pan from the machine when bake cycle is complete. Invert pan and shake gently to remove bread. Cool upright on a rack before slicing. *I've also used sparkling water which I believe gave me a bigger loaf.- the regular water gives you a squatty loaf but still tastes good. **instead of these amts of white rice flour, potato starch & tapioca flour I've used the Betty Hagman mix-2 cups white rice flour (or 1 cup white & 1 cup brown), 2/3 cup potato starch, 1/3 cup tapioca flour. It came out well this way too. ***I've used the whole wheat setting too. Also I don't mix in the yeast with the rest of the dry ingredients-I put it on top of the dry ingredients after I pour them into the bread pan. Also, wanted to let you all know how much of a support you've been to me since starting this diet. I really look forward to reading the messages every day..it's almost addicting:)..I know, I kneed to get a life right:).
