I got a mill today and made some creditable rice flour! $3.15

accumulated savings against the cost of the grinder. ;) A lot of the

recipes I read call for all sorts of flour, especially potato flour

and potato starch. I've found one definition that says they're the

same thing, but no one specific method for making either. Should I

just give up and settle for grinding up rice and beans?

Potato starch and potato flour are NOT the same thing, flour is very

heavy and starch is light like arrowroot or tapioca. Also I am not

sure how you would go about making either one of them, I purchase my

starch....but I use lentils and beans in my grinder (son is allergic

to rice, so that is out).

If you cannot find the potato flour, you can use the instant potatoes. Just

read the ingredients. Some have flavorings in them. I have only found the

Potato starch at one store. Raley's carries Swan's potato starch flour

which you know by now is the not the same as potato flour.

I'm in a bit of a quandary here. I've been buying potato starch flour by the

pound and paying an arm and a leg for it. I asked my hfs about ordering it in

bulk for a better price. They found " potato flour " by NOW Foods at a better

price. I told them I was interested if it was potato STARCH flour, but not if it

was just potato flour. They ordered me a 1 pound box to try, and it says " Potato

flour (also called potato starch flour). " Huh? The hfs gave me the customer

service number for this company, and I called and was told that potato flour and

potato starch flour are the exact same thing. I informed them that my gf

cookbooks are very specific about when to use one or the other, and the customer

service rep insisted there was no difference. She put me through to the

nutritionist, but I had to leave a msg with him and he has not returned my call.

I guess it doesn't make much sense to buy from this company, so if anyone can

share brand names of potato STARCH flour so my hfs can look for them for me, I'd

appreciate it!

I do not know what you are paying for the potato starch flour at the hfs but

Swan's brand at our Raley's is around $3.79 for 12 oz package.

I have a bag of potato flour that is 100% dehydrated potatoes. They are not

the same. is the one who told me that I could use instant potato to

sub for the potato flour.
