Guest guest Posted April 17, 2001 Report Share Posted April 17, 2001 , I baked ' pineapple velvet cake for my daughter's birthday in December. It was great -- however it is a very heavy cake. The first few times that I made it I used fresh juiced pineapple, and then I tried 1/2 c juice and 1/2 c. water and this made the cake a little lighter (more to a child's taste). I have also tried using no pineapple juice and 1C Water and I make cupcakes with the batter (remember you have the fresh lemon juice as flavoring- and you can always add more lemon or vanilla if you want more flavoring. is loves them, especially if I make it in the mini-muffin pans. (I carry her special cupcakes to all the birthday parties we go to and she has no problems with passing up the birthday cake for everyone else). I baked it just as it is printed in the book. I also frosted it with gfcf buttercream frosting and the kids loved it. My only problem with that is that the frosting was a funny color (I used Willow Run margarine) so I had to add food color.
