I used to eat Esekiel bread, but no more. All wheat, even if it's

sprouted, is probably not ok. I wouldn't risk it. For me, anything

labeled wheat is forever off limits.

Sprouted gluten containing grains are NOT acceptable on a gluten free diet.

All the Celiac associations in North America agree....Ezekial bread is NOT

GF. While some believe (without any scientific backup) that gluten is only

in mature grain, in practice there will be gluten. If nothing else, from

the fact that the bread is likely made in the same facility as gluten

containing breads. It's important to remember that we are talking about

molecules of proteins causing problems for many people.

FWIW, the Canadian Food Inspection Agency (CFIA) would recall any sprouted

wheat bread claiming in any way to be gluten free and the manufacturer

would likely get a hefty fine.

7.15.7 Gluten-Free Foods [FDR, B.24.018, B.24.019] (Amended 31/01/97)

A food is not permitted to be labelled, packaged, sold or advertised in a

manner likely to create an impression that it is " gluten-free " unless it

does not contain wheat, including spelt and kamut, or oats, barley, rye,

triticale or any part thereof.
