We've been reading all the books, reading this list, asking questions, getting supplies and doing some practice cooking. We have been waiting for the results of the Gluten/Casein urinary peptide test before we went all the way on the diet. Well we got the results of the test yesterday. 's peptides for milk were 192.4. Normal is less than 2.5. Wheat peptides were off the scale. The scale goes to 200 and his were higher than that! Normal is less than 20. Well needless to say we are starting the diet in full force TODAY (GFCF and anti Yeast). So I went to the store to pick up a BIG bag of rice. I hadn't noticed before that the bag said " Enriched Rice " not just rice (isn't it funny how after a while you just start reading every label you see?). So I look at the ingredients and what did I find, " niacin, ferric orthophosphate (iron), thiamine mononitrate (thiamine), folic acid " . Why can't they just LEAVE THINGS ALONE! So, is the " enriched " rice OK or am I going to have to search for a " pure " rice? We intend to grind our own flour, rice and other, if that make a difference in the kind of rice we need to use.
