Vanilla Wafer Cookies ½ cup butter, softened 1 cup sugar 1 egg 1 tbsp. vanilla 1 1/3 cups flour ¾ tsp. baking powder ¼ tsp. salt In a mixing bowl, cream butter and sugar. Beat in egg and vanilla. Combine dry ingredients; add to creamed mixture and mix well. Drop by teaspoonfuls 2 inches apart onto ungreased baking sheets. Bake at 350 degrees for 12-15 minutes or until edges are golden brown. Remove to a wire rack to cool. Makes 3 ½ dozen cookies. They have a shortcake ring and an apricot biscuit - both plain cookies, one has the apricot, but nice, flavor and the other is like a butter cookie. I get them at the health food store. Ceclia's gluten free grocery has the shortcake rings I know - www.glutenfreegrocery.com Good luck to you and your little one on this diet - you mentioned you're on day 6, my son is on the diet for one year and doing fantastic. Each day you're with the diet it gets easier and easier figuring out the foods. Stick with the list and read the posts and you'll learn alot. Guest guest Posted May 2, 2001 Report Share Posted May 2, 2001 Hi, Here is the recipe from Roben Ryberg's cookbook " The Gluten-Free Kitchen " . She says these are a little higher and paler in color than store bought, but taste better. I have not personally tried them since this is something my son wouldn't eat! Vanilla Wafers 1/4 c. shortening 3/4 c. sugar 1/4 c. oil 2 tsp. vanilla flavoring 2 eggs 3/4 c. potato starch 1 c. cornstarch 1/2 tsp. guar gum 1/2 tsp. xanthum gum 3/4/tsp. salt 1/4 c. water Preheat oven to 350. Cream together shortening, sugar and oil. Add remaining ingredients. Mix well to remove all lumps. Drop by small teaspoonful onto greased baking sheet. Bake 10 minutes, until lightly browned on edges. If your cookies don't seem crisp enough, bake a minute or two longer. Makes 7-8 dozen small cookies.
