Guest guest Posted May 2, 2001 Report Share Posted May 2, 2001 I call them Mall Cookies because they are the next best thing to the White chunk macadamia nut cookies I love at the mall. I bet you could use any nut that works for you, not just macadamia. I haven't tried any others. You will need Parchment paper so they won't stick. MALL COOKIES 2 cups macadamia nuts 1/2 bag chocolate chips (6 oz) 2 egg whites 1 tsp salt 1 cup sugar Grind 1 cup macadama nuts in the blender, but try not to get pastey. Put it in a large mixing bowl. Grind remaining 1 cup of nuts, sugar, and choc. chips in blender - not too pastey, a little chunky is fine. Add to the mixing bowl. Add salt and egg whites, and mix all together. It should be moist, but not soggy wet. Drop onto parchment paper. Bake at 325 F for 20 minutes.
