I call them Mall Cookies because they are the next best thing to the White

chunk macadamia nut cookies I love at the mall. I bet you could use any nut

that works for you, not just macadamia. I haven't tried any others. You will

need Parchment paper so they won't stick.

MALL COOKIES

2 cups macadamia nuts

1/2 bag chocolate chips (6 oz)

2 egg whites

1 tsp salt

1 cup sugar

Grind 1 cup macadama nuts in the blender, but try not to get pastey. Put it

in a large mixing bowl. Grind remaining 1 cup of nuts, sugar, and choc.

chips in blender - not too pastey, a little chunky is fine. Add to the

mixing bowl. Add salt and egg whites, and mix all together. It should be

moist, but not soggy wet. Drop onto parchment paper. Bake at 325 F for 20

minutes. Allow to cool on the paper a few minutes to firm up before

removing.

This looks great! Some questions - are the mac nuts roasted or raw,

salted or unsalted? I can't wait to try this recipe!
