Guest guest Posted May 2, 2001 Report Share Posted May 2, 2001 I thought when a recipe called for egg replacer, they mean Ener-G Egg Replacer. It comes in a box. It's a powder that you mix: 1 1/2 tsp of powder + 2 TBSP water to equal an egg. It contains potato starch, tapioca flour, leavening (calcium lactate, calcium carbonate, citric acid) carbohydrate gum. I would guess you could probably leave it out of the recipe. I know in bread it's usually optional. We use egg substitute: 1 1/2 TBSP oil + 1 1/2 TBSP water + 1 tsp baking powder = 1 egg.
