Looking for ways of adding protein to breakfast/snack

Hi

You know I used to carry around food with me because I have low blood sugar

which usually clears up right after I eat.. For my son I get him those

Sheltons turkey stiks which are gluten free. Good protein snack.. Sometimes

I just order a whole case.. We can't live without them.. What about some

pepperoni (HORMEL) with some crackers..

For breakfast how about a toasted sandwich with toffutti , maybe some ham

or bacon... all natural links are good and in regular grocery with

gluten free waffles.. I also buy the sheltons turkey sausauge patties and

make sandwiches for breakfast all the time... . I am getting hungry

I noticed that my 7 y.o. is often at the end of his rope when I pick him

up from Kindergarten. I believe it may be due to low blood sugar as

breakfast is his smallest meal of the day (haven't hit on anything he

likes yet for breakfast, but he eats well during lunch and dinner).

The nutritionist at gfcfdiet.com said I should make sure he has protein

and carbohydrates at every meal. He won't eat eggs in the morning, so

does anyone have suggestions for ways of adding protein to his breakfast

or morning snack? He almost routinely has Almond Butter & Jelly

sandwiches on GFCF bread for lunch, so I am a bit reluctant to use more

almonds in the morning (he can't do peanuts).

Currently his breakfast consists of either 1 piece of GFCF toast and

orange juice or a *very* small bowl of GFCF corn flakes and juice. His

morning snack is usually corn chips and some kind of fruit (blueberries

or banana usually).

Can anyone share ideas on how to up the protein?
