Guest guest Posted May 8, 2001 Report Share Posted May 8, 2001 Creamy Vanilla Pudding--Microwave 3 T. cornstarch (or you could probably use an equal amount of tapioca starch here) 1/3 c. sugar 1/2 t. salt 2 c. milk substitute (soy works okay here, but if you are using a powdered infant formula, make sure you mix it ahead of time and that it is ICE COLD before adding it in). 1 t. GFCF vanilla Combine cornstarch, sugar, and salt. With whisk, stir milk substitute into cornstarch mixture. Cook in microwave on high until thickened and bubbly, about 6-7 minutes, stirring every two minutes. Stir in vanilla. Refrigerate. For chocolate pudding (if tolerated)--Add 1 1/2 oz.
