Guest guest Posted May 9, 2001 Report Share Posted May 9, 2001 Whoever posted that recipe, THANK YOU VERY MUCH! I just used it and got terrific results...my ingredients were 2 cups Bette H. Mix flour w/ xanthan gum 1/4 cup GFCF Margarine for the fat one egg 2 TBS baking powder one extra egg white and some rice milk ( 1/2 cup) for the liquid 3/4 cup pearsause and some honey for the add-ins 3/4 cup brown sugar for sweetener cinnamon and ground ginger and some salt I blended it up really well in mixer ( really, really well) The texture of these muffins is better than any GFCF bread I've ever baked...it's soft and stretchy like real bread! Not like typical muffins but I'm very happy about this! Thanks Again! Cherri ( who gets to stay home and cook today, because the daycare provider had an emergency. What a luxury!)
