Fortunately we live by a big river, several smaller ones and lots of lakes though. Um, I use the canned salmon, not sure how I'd make them with fresh fish. s. Guest guest Posted February 10, 2005 Report Share Posted February 10, 2005 To make salmon patties you w/ fresh fish you have to cook the salmon first, I would just pop it in the oven and bake. Then throw in food processor and chop, don't pulverize. Then form into patties (whatever shapes you like), roll in seasoned breadcrumbs and brown in skillet. He must have a *secret spot* we are in Vancouver and 10 years ago it was easy to catch a salmon, you were almost always gauranteed a catch, not so anymore! Even out by Vancouver Island where some of the best fishing is supposed to be. You can just steam your salmon and add anything you want for your cakes, use egg, mayonaise and a bit of flour and very well crushed cornflakes (if you want) to hold them together. I use crushed cornflakes and flour in my cakes as well as to coat them, makes them crispier and really holds them together. Then just anything around the house, shreeded carrot, onion, celery etc and I really like cajun spice in there too.
