Guest guest Posted May 1, 2001 Report Share Posted May 1, 2001 I am new to the list and a week into the diet. I have a few questions for some of you seasoned GFCFer's. We have decided to begin the diet at the grass roots (chicken, potatoes, rice) and then introduce other foods to look for any allergic reactions (how in the world can you even tell with all these " delayed reactions " ugh!!!!!). With such a limited diet, I am so worried about my little guy (4 years old) developing an intolerance to one of the above. How long does it take for such an intolerance to transpire (if in fact it does)? Are a few weeks of " experimenting " dangerous? I am trying to get in a better rotation schedule (as in Karyn Seroussi's book). My little guy had a scratch allergy test done which showed up with a very slight reaction to potatoes. (I am having the IgG and IgE allergy testing done on him and think I will be able to breathe a little easier when I know for sure what his allergens are). So today, I have decided to try potato free (for one day)....but again, I am so concerned about all this rice (he is a huge eater and is constantly hungry on this diet!!!!) Are many kids allergic to potatoes? And preschool today....it breaks my heart to send my little guy to preschool today with his rice cakes and crackers while the rest of the kids are " living it up " . I know it's gonna kill him! Any suggestions? I'm thinking about taking him out for " snack with Mom " . I'd appreciate any advice you have for this newcomer! I have already learned so much! It's funny. When I read all of the postings to this list, I just think that everyone " thinks this way " and then I am quickly awakened to the " real world " . I am gradually learning and can " almost " say today that I am not " totally overwhelmed " . One more questions...I have heard that it is okay to test for peptides even though I have already started the diet. What do you think? Or should I take him off for a few days to get an accurate read. (I understand that the test is not accurate. I will still continue the diet if it comes back in normal range...but I will be even more motivated if it is high).
