Would someone kindly enlighten me? I understand the damage gluten can do,

and I understand that because of that, casein can be a problem until the gut is

healed. What I don't understand is, when, if ever, can we reintroduce casein?

I have several gluten-free cookbooks that include tons of dairy products, so I

assume not all celiacs abstain from casein -- at least not for life. But, if

casein is reintroduced, how do we know for certain that it isn't adversely

affecting our kids? (unless, of course, they have obvious reactions to it).
