Guest guest Posted April 10, 2001 Report Share Posted April 10, 2001 Hi all, I haven't had time to post in a while, but I certainly can't do this without the support of you wonderful families! In my gut, I believe I know the answer to this, but I guess I need to hear it from you all. 2 of my sons have been GFCF for a few months now. The 10 year old (ADHD) has responded without a doubt. The 12 year old (Asperger's) has not enjoyed such success. I have had it in the back of my mind that there is something else in his diet he is sensitive to, but have never tried hard enough, I guess, with eliminating more from his diet. (Of course, you all, more than anyone, realize that it is really the whole family I am talking about.) OK- now getting to the point. About a week ago, I had a busy day and did not eat anything until about 7pm. What I ate was a rib eye steak and some corn (from a can). Not even an hour later I had the same sick-hole-in-my-stomach feeling that I have come to recognize when I eat wheat pasta. The following day I had the horrible headache all day long also. Now the questions: 1- Does this mean I am sensitive to wheat and corn? My husband doesn't think so since I can eat smaller and less concentrated amounts of these foods without such problems. He reasons that since I ate corn tortillas a week earlier without noticing symptoms, I am being a hypochondriac? 2- Since I have noticed this in my own diet, does it follow that corn could be a culprit for my son? Are specific food sensitivities hereditary? 3- If I have to remove corn, what the heck do we eat! Obviously there are things I know of, but as Mark pointed out to me, removing corn also will make most of the contents of our food inventory off limits. 4-I have every GFCF cookbook I have heard mentioned, but haven't had time to really read through them. Is there any particular book I should look to for help with this? 5- I need help mostly with meal ideas, I guess. I want to plan a month's worth of meals at once, but am getting stuck in repeating the same meals too often and running out of lunch ideas, especially corn- free. Including powdered sugar, mixes, syrups (i.e. found in candy, ketchup)....There are some really create web sites on corn and how it is hidden in foods. Guest guest Posted April 11, 2001 Report Share Posted April 11, 2001 Hi Joan, my son (PDD/NOS w/ autistic like symptons)has been for the most part, (except all the time and again infractions we trip over) GF/CF for over a year with incredible results and Corn free maybe a month,( I started 2 months ago but I kept tripping over corn infractions too.) Now the interesting thing is that I am ADHD and began the CFGF diet for myself three months ago just out of curiosity. My only real issues not readily corrected by the daily doses of dextrostat were joint pains- ( I have scince learned one of those- the worst actually was a broken & sprained ankle that I had walked on for a year- smile its the whole ADHD thing) anyway- after being on the diet, I nolonger need to wear my braces on my hands for carpol tunnel at night and often can sleep through the night now without ibupropen. I am 38. NOW when I eat wheat, guess what, my cheeks turn beet red and I get the runs!!!! And I had none of these symptoms prior to starting the diet. Also about a year ago I became allergic to eggs and for some reason soda. The allergist said he couldnt imagine what was in sprite that I would be reacting to, but what ever it was as the year progressed when I ate it my lips swell up, turn burning beet red and the skin is sore and chapped for days. Once I began this diet, I lost 18 pounds I work for Head Start and need to pretend to eat with the kids. So quite by accident I discoverd what I was reacting to because one day last month the only thing they served that was GFCF was peaches. All I ate for lunch was peaches and water. Before lunch was over puuff my lips were off and swelling!! I know I am not allergic to peaches but they were in corn syrup! There is corn is most sodas! It happened again this week. All I ate was yams and poof again. They didnt have a heavy syrup but must have had some corn. With my son he had incredible results with the GFCF diet in the first year but then hit a plateau and then regressed. I discovered that the corn that had previously made him a little hyper was now causing severe aggression and regression and in his case even loss of bladder control! I didn't realize it was in salt and he craves salt. As soon as I eliminated the obvious sources of corn and substituted sea salt for table salt and eliminated all salted products he is back on track and appears age level and normal for most of the day! He went from a first grade reading level to begining fouth grade in one year! (however-although he has an adequate site vocabulary he still can not write the alphabet so there are still pockets of delay) Anyway - my point is that corn has run my flamily through the mill this year! And even now at times I can it a small amount of popped corn with little reaction but cannot eat corn in a can!
