If avoiding hydrogenated fats and butter, it is more difficult to find a good substitute; tropical fats like coconut butter (probably in combination with other fats) often work. In a recipe like this, that only uses a little, the fine differences between shortening, ghee, margarine, etc., probably don't matter.
