Soy Cheese

Hi

Does anyone use or know of a particularly good soy cheese brand? Our

commissary manager said if can find it, he'll try to stock it. I'd like to

take him up on the offer. My son (3) really misses his macaroni and cheese!

I think " good soy cheese " is an oxymoron. :-) But we use " Soymage " .

It comes in Cheddar, Mozzarella and American singles. We use '

recipe for cfgf mac-n-cheese in Special Diets for Special Kids.

I say this with caution, because there seem to mixed feelings about

it. But from personal experience, we have been thrilled with Tofutti

shreds and slices. Even my nt son will eat them on pizza. They

don't melt perfectly, but MUCH better than Soymage (which by the way

is the ONLY other casein free cheese that is also GLUTEN free, the

others contain oats - like Vegan Rella and Veggie Kaas)

I would make sure though that your child has no reaction to it, so

start out with a small amount and gauge how he is afterward. The

company will not GUARANTEE it to be gluten free, but they are just

covering their tails because they say there could be some hidden in

the natural flavorings.

BUT....if you don't see any reactions, like many of us have not. It

is actually very good for pizza and mac and cheese. My ultimate

testimony is the fact that my nt son AND my hubby will eat it and ask

for more!
