Hi all,

Just thought I would share: I found a Cuisinart Ice Cream Maker at Sam's

Club for $45!

I was thrilled - all 4 of my children LOVE ice cream and to make life more

" challenging " a new custard shop opened last spring at the end of our road.

If you can do soy, this is easy. My 6y NT daughter helps me make this,

and we have frozen it in a quart container. I have an ice cream machine

but I don't use it for this recipe. It also makes great popcicles, just

cool it a little, pour into molds and freeze. Even our neighborhood kids

eat these with our kids and love them. I have another recipe but it also

is soy, when I find it I will post it, but this is our regular popcicle

treat year-round.

Frozen Fruit Tofulatu

2 1/2 t Unflavored gelatin

1/8 t Salt

1/2 c Sugar (to taste- I use brown)

1 1/4 c Frozen fruit and/or berry juice concentrate, thawed

10 ea (oz) soft tofu or silken tofu, drained (I use more, just because I

have it)

1/4 c olive oil

3 T Fresh lemon juice

1/2 t Vanilla extract

1. Sprinkle gelatin over 3/4 cup water (in saucepan) and allow to sit 3

minutes.

2. Cook over very low heat until gelatin is dissolved. Mix in salt and

sugar and cook, stirring to dissolve sugar. Remove from heat.

3. In blender, or processor, combine juice, tofu, oil, lemon juice,

vanilla, 3/4 cup water and process until very smooth.

4. Add gelatin mixture.

5. Freeze in ice cream machine, according to manufacturers, instructions,

or freeze in ice cube trays and follow manual instruction as noted above.

Makes 2 pints.
