Guest guest Posted April 27, 2001 Report Share Posted April 27, 2001 >From " The Gluten-Free Kitchen " cookbook: 1 egg 1/4C oil 1/4C sugar 1/2C potatoe starch 3/4C corn starch 1/4tsp. baking soda 1 1/2 tsp. xantham gum 1T baking pdwr 2/3C dairy-free milk 1/2 tsp. salt 1 tsp. vanilla 2T shortening Combine all ingredients. Mix well, being sure to remove all lumps from batter. Pour into a greased 8X8 inch pan. Sprinkle topping over. Bake 40min. at 350* or until toothpick comes out clean.
