Guest guest Posted April 5, 2001 Report Share Posted April 5, 2001 I love this company's Wild Rice Pancake and Waffle Mix. It is listed wheat free, dairy free, gluten free, K (inside circle). It uses all organically produced ingredients. Ingredients: Brown Rice Four, Wild Rice Flour, Non-alum Baking Powder (Monocalcium Phosphate, Bicarbonate of Soda, Corn Starch), Modified Soy Protein, and Xanthan Gum. This tastes better than any regular pancake mix I've tried. Only one thing: it tends to burn more easily, so make sure you have lots of oil on hand and maybe lower the temperature a bit for pan frying. Because of my success, I was thrilled when I found their Wheat Free All Purpose Baking Mix (also organic, also K inside circle). Ingredients: Brown Rice Flour, Potato Starch Flour, Tapioca Flour, Non-Alum Baking Powder, Whole Fava Bean Flour, and Sea Salt. Plus, they included a recipe booklet inside, and recipes outside the box. It was a bit more expensive than some ($3.99 for 28 oz--1 3/4 lb.), but looks wonderful to try. I will let you know the results. I found a decent-looking GFCF cake recipe that I am going to make for my son's birthday this June, and I'll let you know if anyone else likes it or notices a difference (I'm not telling them). Please note that not all of their products are GFCF, but they do carry a lot of products which are. My local supermarket carries it in the health food section, but, if yours doesn't, you should be able to find it in a health food store. It was late and I needed cupcakes for preschool in the morning. So I mixed it as directed for Brownies and baked it as cupcakes (with paper liner). They were fantastic! They were better then the " regular " birthday cupcakes. They were so good that they probably have casein in them. So if anyone writes this company, could you let me know. And by the way, for icing I used GFCF Marshmallow Creme. It has corn syrup and food dyes, so I would only use it on special occasions. It was like the inside of a hostess cup cake.
