Guest guest Posted April 20, 2001 Report Share Posted April 20, 2001 I made the Pearsauce Bread from ' " Special Diets for Special Kids " (pg. 134) and it was a success. We are egg free and that is always a challenge. I sometimes will use Ener-G egg replacer (but don't like to because of the corn issue), but I was out of that so I just used (2) jars of the larger baby food pearsauce in place of the 1/2 cup of pearsauce it called for. Baked it in a glass 9 x 12 pan (it said to bake in a 9 x 5 loaf pan, but I try to use glass when I can - metal issues) and, it turned out more like a cake than bread and was really good.
