Guest guest
This may sound like a silly question, but I am curious as to what vegetables are good to eat for people with mito. We have stopped eating canned vegetables, and are now only eating fresh or frozen vegetables. I can honestly tell the difference with some...especially the corn and green beans. I know I am not supposed to eat carrots, but I am not sure about brocoli and cauliflower and things like that. I also like asparagus. Any information would be great. Guest guest
, Jean Carper is probably the best-known the nutritionist who offers reliable information about the health benefits of certain foods. Below are links to some of her columns on the specific benefits of various vegetables according to the latest research. http://www.usaweekend.com/01_issues/010826/010826eatsmart.html http://www.usaweekend.com/02_issues/020505/020505eatsmart.html http://www.usaweekend.com/02_issues/021110/021110eatsmart.html http://www.usaweekend.com/01_issues/011021/011021eatsmart.html Health benefits of four spices: http://www.usaweekend.com/02_issues/021110/021110eatsmart.html To scan the archives of her columns, go to http://www.usaweekend.com/food/carper_archive/index.html Generally, if you steam vegetables, whether fresh or frozen, you retain more of the nutrients. Otherwise, use the smallest amount of water possible. http://www.usaweekend.com/04_issues/040919/040919thinksmart.html#eatsmart Antioxidants [which are plentiful in vegetables, among other things] are thought to be beneficial for people with mitochondrial disease. The reasoning goes something like this: When metabolic pathways are impaired, the body generates more than a normal amount of free radicals, which in turn do cellular damage that may contribute to progression. Many mito experts recommend Vit E and Vit C and other antioxidants to help minimize the damage from excessive free radicals. For this reason, I take Vit E and Vit C and have for many years. Certain foods such as blueberries are also very high in antioxidants and may have value in preventing damage in metabolic disease.
