One thing I note and want to say is that if you are SUBSTITUTING new on GF or

CF, the Protein/Carb/Fat ratio of things are different. Carbs can be

tolerated [or not!!, meaning cause behavior problems] as sugar. So if you

used to make a protein powder milk and fruit " smoothie " and you now use, say

Rice Dream [okay, a diff one, bu tyou kow what I mean] you tend to lose the

PROTEIN of the milk and add a whole heckuva lot of more " sugar " and/or

carbo's [same thing] with the Rice Milk, etc.

So, I wish to point this out that if your kids is sensitive to carbo/protein

ratio, beware and be AWARE of the Protein/Carb numbers when Substituting GFCF

type foods for previous protein-containing foods.

Another time to watch out is for Cheese; Usu Cheese is a protein component.

Fake CF cheese doesn't have that protein component and look at the PROTEIN to

CARBO ratio on the old Real Cheese versus the Fake Stuff Cheese.

Blood sugar swings, body's not used to certain levels, etc., can cause

" acting out " [hypoglycemia, etc.]

As an aside, it's my understanding that Strawberries fall into the

Phenol-Thing category, and often they are used in smoothies, just fyi.

Okie dokie; that's all I have to say

Joyce, who always ponders the Protein/Carb ratio's for my kiddo
