In my waffle test, I ground some pecans for the first waffle, and then used pecan flour for the second waffle. I was unaware that there was a current discussion regarding pecan flour. I haven't opened a bag yet--never occured to me they might not be tasty. I will bake in the next few days (would do it today, company put me big time behind!) and let you all know about it. They are a company that grinds their own flour (they call it meal)--I would think it would be fresh. They are very friendly--it would be worth a phone call to them Georgia is the pecan state-- huge industry there and I would hope they would be the best.
