Guest guest Posted March 24, 2006 Report Share Posted March 24, 2006 I just made the cake. It tastes good, but it was done at 30 minutes. Was the original baking time 50 minutes? I admit that I couldn't grind the coconut into a powder or actually puree the bananas and strawberries (I smashed them up really good). I prepared the recipe with a mixer since I have no food processor or blender right now (both broke in the last couple of weeks and no $$ for new ones). I did want to say that it is very tasty. I think in the future when you post recipes, you should mark them as " high altitude directions " so those of us living at sea level don't burn them to a crisp...LOL. Fortunately, I set my timer for 30 minutes because I was concerned that the edges might burn and it might need covered for the rest of the cooking time. When I checked on it, it was definitely done. I'll let you know how the recipe differs from your original version once I can get a food processor again. It actually tastes really good with the coconut dessicated and not ground into a powder. But it does have that chewy coconut texture to it. But since all of us really like coconut, it doesn't matter. I actually think it would taste really nice as a pineapple upside down cake. Next time I make it, I think I'll try it and see how it turns out. Or maybe I should just cook some pineapple in a little honey and the juice and put it on the top of each piece... either way, I think it would taste good with pineapple. Also, she doesn't like coconut much but, she will eat this cake. It also comes out good using fine almond flour. Thanks for sharing this recipe. If concentrate is illegal, why is Welch's grape juice from concentrate OK and shouldn't Dole packed in in pineapple juice be illegal (as opposed to " packed in its own juice?) Carol F.
