Could you whip up egg whites stiff-- add honey and vanilla put it in a spring form and bake it and then put coconut on top and slip it out of the form when cooled and onto the cake? Carol F. Guest guest Posted March 24, 2006 Report Share Posted March 24, 2006 , I use the one from BTVC that comes out like marshmallow frosting. You can color it with juice. My boys like it a lot. I made a bunny cake last year with the 14 date cake and frosted it with the marshmallow frosting and decortated the face with fruit leather and fruit juice dyed coconut. It was a big hit. Guest guest Posted March 25, 2006 Report Share Posted March 25, 2006 My son's favorite frosting is a combination of nut butter, honey and vanilla, whipped up. Made with almond butter, it tastes great with banana type cakes, i prefer the cashew butter myself. It has a great texture, spreads easily and doesn't get too hard afterward. You can adjust the level of sweeetness, this combination is pretty forgiving. I found the BTVC one far too sweet. I sometimes will add coconut butter into the mix, as this also adds some great light texture. [and my son needs the calories!] My son goes to a school that is peanut and tree-nut free, so many of his favorites can't go to school. The other day, someone brought in a birthday cake for the teacher. Because there was no forewarning, i didn't have anything 'special' there for my son, but it turns out it didn't matter. He apparantly looked at the cake, said " that looks yucky. my mom make me special cakes and she is a gooder cooker " !!
