Just a couple of ideas. Pecanbread has a recipe for chicken pancakes- I

haven't tried them yet, but I am going to at lunch today. Make those and put

on some apple butter- you can buy it at the health food store, or take apple

sauce and cook it down. If your boys can tolerate sesame seeds, you can buy

tahini in the import foods sections of the grocery store. I put tahini and

apple butter on my sons pancakes and muffins, and call it peanut butter and

jelly. There was also a recipe posted a while back for nut-free pancakes. I

wrote it down, because I am also going to try these, but just haven't yet.

1 cup finely ground chicken (cooked)

1 pureed medium banana

1/2 cup butternut squash (cooked)

1 egg

1/2 tsp baking soda

mix well (food processor) put in muffin pans with liners. Bake 320 for 20-25

mins.

My son also doesn't tolerate bananas, so I plan to use pureed pear and/or

apple, add more egg, and cinnamon.

I just tried the chicken pancakes. Alone, they taste a little chickeny, but

I put a little apple butter on them, and my son gobbled them up.
