SCD is highly nutritious and well-balanced, much more so than SAD or GFCFSF... and our kids can actually absorb the nutrients. Those who are worried about too much protien... sneak in more veggies. For those of you who have picky eaters and only want muffins, to balance it out... I modify the nut muffin recipe and put in equal amounts of vegetables... for example, if the recipe calls for 3c nut flour, I also add 1cup of frozen chopped spinach or collard greens, 1 cup frozen chopped onions, and 1 cup crushed dried tomatoes, sometimes I might add some garlic, bacon, or lamb. The vegtables can be finely chopped or pureed. You have to get creative, within SCD boundaries, so your child can get his individual needs met. I use the bread recipes in Lucy's cook book for muffins, bread, etc. Meatloaf is always made with vegtables chopped or pureed. The carrot cake or spice cake muffins are filled with dates, figs, prunes, dried mango, raisins, carrots, etc. ... You mentioned if a recipe calls for 3 cups of nut flour you are adding 3 cups of veg. Do you have to modify/ add anything else to the recipe to make it stick together? Thanks! Pages 68-70 have bread/roll/craker recipes with which I have 'tampered' ... I even called Lucy to get her advice. Instead of using DCCC, use I goat yogurt; or goat chesse instead of the others... I use what's covienent. It's pretty dry with all the extra ingredients so I add an extra egg and 1/4 c water, until I get the right conistency.
