I've just experimented with different oils and oil combinations, as well as cooking temps to try and make them " lighter " in color. Mida's Gold Pancakes 4 eggs 2 Table honey (I suppose you could use less) 1 teas vanilla 1 cup almond flour 1/4 tea baking soda 1/4 tea salt Beat eggs. blend in honey and vanilla. Mix well with dry ingredients. I use peanut oil, or coconut oil, or combination. Cook on pretty low heat (between 3-4 on my flat top stove).
