Guest guest Posted April 9, 2006 Report Share Posted April 9, 2006 I make very easy and tasty " pies " from many vegetable combos. Here is the method including the ingredients I used today. You can use other vegetables but this tasted good 1/2 cup thinly sliced Butternut squash 1.2 peeled zucchini, sliced thin 1 baby eggplant skin on, sliced thin 1/4 sweet onion sliced thin 2 tablespoons almond flour 2 slicces Jarslberg ( or any legal hard cheese) in strips or shredded olive oil in a sprayer dried rosemary, basil and oregano salt and pepper honey Spray a pyrex pie plate with olive oil Fan the veggies around the pie dish in any order. Add the seasonings and cheese and toss to distribute. Sprinkle on the almond flour, spray with oikl and drizzle on a very tiny bit of honey Bake uncovered, 1 hour in a 350ºF. oven 45 minutes to 1 hiour. Cool slightly before serving. Carol F.
