I would melt the cheese in a double boiler. Adding butter would make it very

tasty. I usually just plunk some cheese on top of the cooked vegetables cover it

with a pot

lid, and pray it will melt in some attractive and non gummy fashion. I have

tried stirring

yogurt into melted cheese once it's off the heat. You have to stir like mad!

Experiment.
