Guest guest Posted April 22, 2006 Report Share Posted April 22, 2006 I have an idea. Raw (Unroasted) Cocoa Nibs. Supposedly there are lots of healthy properties to cocoa. But when heated to roast or make chocolate, some of those properties change (as is true with other foods). One property that I have read about is the " caffein effect " . Supposedly there is none in raw beans, only after some chemical changes that occur after adding heat. So, if this were for my daughter, I would make a cake that is the best for her, maybe even an individual cake ALL for her. Then I would make an icing using ground raw cocoa and honey (and whatever else you need). trying to stay as SCD as possible and yet providing a yummy, partly chocolate treat. I guess you would have to experiment, because I don't know how to make icing. To find a place to order these, google raw food sites and look for raw cocoa nibs. I had a site in mind, but couldn't find it and noticed that there are others that look reputable. It is very close to chocolate in flavor and it is definitely brown like a chocolate cake. Make a 14 Date Cake. Fabulous cake. I don't even like dates, but I like this cake. I chop the dates and soak them like the recipe says, but I also puree them in the food processor. It seems to work better for me. I do agree with you that it is super hard to be on a special diet, especially now that practically no kids eat healthy food anymore. At least when I was young, there were still kids that brought left-overs from home for school lunch. Nowadays, it seems that just about all of the kids eat junk food for lunch every day. It's very sad to me, but it also makes it nearly impossible for our kids to not stand out in a crowd. My son is 9 and is really beginning to dislike being different. It's really hard. I think it tasted good (I couldn't eat it because I am avoiding eggs, but my daugher ate it). It sank down in the middle and was a dense cake. (Yes, I whipped the eggs whites to a stiff peak). The only change I made to the recipe was that I used lime juice because I didn't have any lemons. Next time I will use 2 more egg whites for the 1/2 recipe because I think that it will turn out better (hold its shape better). I looked at similar recipes (chiffon cake recipes) in my old (non-SCD) cookbooks and they used 7-8 egg whites for a whole recipe. When I have had this problem with other recipes, I have been advised to lower the heat and bake longer. This advice has done the trick in my case.
