We used cultured veggies extensively for 6 months when we tried the

BED diet prior to starting the SCD. I fully believed it was the best

way to get large doses of probitics into my son's gut. While I fully

believed the theory behind this, it didn't seem to do him a lick of

good. He's done much better on the SCD.

I think there are some ways to incorporate certain CVs into the SCD,

but I have never tried. Some day I will. I still have about 16 jars of

CVs (representing days of labor) in my fridge and would hate to toss

them. I would consider them a raw vegetable, even though they are

supposed to be fairly pre-digested by the bacteria, so I would'nt try

them until fairly far along in the SCD diet. Someone here has

suggested to me that the CV juices are safe to drink, though.

One issue that someone, maybe the moderators could address is the

specific probiotics that are cultured. At first, we let the veggies

ferment in their own native enzymes and flora - they always tasted

great and weren't rotten (following the BED method of shredding them,

making a brine slurry with blended veggies, seasalt and water to pack

them in and sit for 5-7 days). But we never knew what probiotics this

method yielded. After my son was diagnosed with a D-lactate condition,

we grew nervous about what kinds of probiotics we might be feeding

him, so we switched to using his regular probiotics to " seed " the

fermenting veggies to ensure he got the right bacteria.

My personal opinion is that the right kind of CVs, grown and

administered carefully can be a great form of gut tonic full of

probiotics. It didn't help us when we used it though, and my son's gut

isn't healed enough yet that I'm ready to go back and try it again. I

would love to hear the moderators' opinions on this.

To get the best input on this topic, I would recommend Healing Crow.

I have to admit that I have never cultured any vegetables. So, I am

not much help on this particular topic, but I know Seth is VERY

knowledgeable. I would ask him and tell him that you want to make SCD

legal cultured veggies.
