The problem is that the school is nut free so no bread, muffins etc. My daughter loved sandwiches and now I am sending soup and she does not like soup at lunch. She wants someting quick because she runs out of time at lunch and she says she does not like soup. All week her soup has come home full and she is starving at supper. Any ideas??? Avocado has lots of calories. You might try that. I made a spread from hard boiled eggs and avocado. Maybe you could put it on one of the nut-free breads. I tried it, and loves it!! Any other sandwich spread ideas? LOL The only thing I might add is that I've been cautiously trying the Strub Kosher pickles that Carol mentioned. Found them at Trader Joes. I chopped some pickle and put it in with the sandwich spread. I think pickles count as raw food, and since you're just starting, that would probably be for later.
