Guest guest Posted April 27, 2006 Report Share Posted April 27, 2006 Hi all... I'm mom to Gillian 7 years old w/ autism. Have been 'dieting' for over 5 years. GFCF corn, soy, egg, rice, potato, pheno free. and 4 day rotation. Very good eater. Looking to make some changes in her diet and we are not that far off of SCD... need to pull bean flours and make a few other adjustments I searched archieves on eggs... we have a real bad PST system and don't tolerate eggs very well at all( sulphur). She has been off them for 2 years. I tried to intro an scd p cake yesterday w/ egg and today have bright red lips... usually a sign of bad detox for us. So, how do I proceed w/ scd w/o eggs? We also will use the gelatin substitute idea listed for some baked items and that works fine. It is hard though....there are so many tempting recipes using eggs. My daughter likes it when I mix some cooked squash with banana and fries it. I think it tastes bad, but she likes it. What is a PST system? The only truly annoying part was how the meatloaf would not hold together. I'm not really savvy about phenols. If there are some nut flours you can use, you can enjoy a number of baked good recipes from the pecanbread website. We relied on the Eggless Almond Flour bread. Other nut flours can surely be substituted. I have a yummy spinach cracker recipe that I could send you, if that sounds like something you would want. Guest guest Posted April 28, 2006 Report Share Posted April 28, 2006 Experiment with substituting egg with apple or pear sauce and gelatin into recipes too. 1/3 cup fruit purred /sauce of any kind with 1 T of gelatin = 1 egg Just mix in gelatin " dry " into cake ingredients and mix. Never tried cookies yet. May need to experiment....with different recipes, making notes of success. It is just a warmed up mushy thing really, but she likes it for some reason. The grated squash (uncooked) just might be a good thing...try it and let me know. I tried using butternut but she didn't like it. Whatever!
