Jiggling yogurt

Having read all the info I can find about

making yogurt, I have one unanswered

question.

Instructions say to put the yogurt in the

refrigerator, but not to jiggle it much.

But later, can't you blend goodies like

strawberries into the yogurt?

When does dividing line occur---of not

wanting to disturb the yogurt and being

able to disturb the yogurt?

What is the science behind this? I'm

intensely curious.

Don't know the science but told to let it set for six hours. Then you can do

anything with it.

When you first take it out of maker it is very runny. It congels

when cooled. The instructions that I have says cook in maker for

min. of 24 hrs and frig for min of 8 hrs before using. I also read

somewhere that it continues to eat up lactose while cooling. Don't

remember where I read it though.

angie,

i think you just need the structure of it to become stronger by

chilling it in fridge. otherwise it might not support itself and

stay thick. for example if you took a small amount of it out and

put it in a glass, mixed it while still warm, you then chilled it,

it might not thicken as well. i dont think normal moving of yogurt

to fridge would be subjected to unusual amount of jiggling? i think

later you can blend what ever you want (that is legal of course) and

mix it to your hearts content. just as you use a yogurt for a

smoothy or mix it around i think it would get less thick. i shouldnt

hurt the little baby organisms that are going to replenish your gut

i dont think. lets face it after we eat it i am sure there is some

jiggling.
