need high calorie SCD recipes w/no nuts or dairy...what do you eat w/o them?

I've been doing the SCD for about 2 1/2 weeks with no dairy, and I'm

thinking about trying to cut out nuts, too, since I'm not seeing any

results. But I am nursing and have a high metabolism anyway, and I

need lots of calories. I have looked at some of the SCD recipe

websites, but most of the recipes require dairy and/or nuts. Does

anyone have any good recipes (preferably high calorie ones)?

And what do you eat if you aren't doing nuts or dairy? I've been

eating lots of hamburger patties, homemade chicken soup w/carrots,

applesauce, squash, and tons of eggs, plus some nut butter pancakes.

I'm probably getting 1/3 of my calories right now from the nut butter

pancakes (not all from the nut butter, but between the eggs, oil to

fry them in, banana I add, etc), so it is going to be hard to come up

with a replacement for that many calories.

I am also nursing! And SCD 2 months

Substitute nut four for coconut flour! Add a little gelatin too anywhere from 2

t to 1 T....to make it glue together better. Put it in dry before you mix

it....cook and it adds not only glue to make it hold together better it adds

some protein.

I Also substitute one SCD banana with 1 cup of coconut flour = 1 1/2 cup nut

flour. This works too. This works great for waffles!!!!! And they are good!

Use the Midas God recipe in BTVC book and try this substitution.

Make sure coconut is SCD and pure and not " fat free " . Can process it yourself

in food processor to make more fine...then throw in one egg and process

more...to make finer...then add to rest of ingredients in recipe.

After two month SCD I am now able to tolerate a few nuts...so is 18 month and 23

month old daughter....nursing both of them!

Will try scd goat yogurt in a few months after we heal some more.

Hmmm...I just read on another post that you aren't supposed to do

coconut for 6 months...so how does that work? Is coconut flour

different than regular coconut as far as how well it is tolerated?

i would definitely try to use coconut oil and avocado wherever you

can. when you are further along you could look into lentils or beans.

they give some nice amount of carbs as well as protein. you can play

around at www.fitday.com with some comparisons.

When I make coconut flour I process it in the food processor for several

minutes. Even 23 month old KiKi was able to eat it. I first process it as fine

as it will go ...and then add egg and process it more. Then add to ingredients.

She was eating this at the four week mark! No problems...but all are different.

Also remember that Elaine did not create the stages....these are just guideline

to mothers on pecan bread, that have proven to be helpful...but not set in gold.

The intro is the most important...in the BTVC book, then listen to your own

bodies response for not being ready for a food.

I was nut free and egg free for a few weeks (I was waiting on some test results

from my

allergist before I could/would eat them). To be honest, I ate a lot of bacon.

I really

needed something to fill the gap that giving up nuts and eggs made and bacon fit

the bill.

(I was also trying to not eat dairy, but there were a few days that I was so

hungry that I did

eat the SCD yogurt).

I purchased the bacon from the meat counter at Wild Oats. I asked two of the

butchers

(separately) and they both assured me that there were no additives, no honey, no

sugar,

no salt, nothing. In fact, at first they thought that I wanted honey and sugar

and salt so

they steered me away from the meat counter and pointed me to the packaged

bacons,

until they understood what I really wanted. (Note: This option is not for

everyone because

there is no package to make sure that what they are saying is true. I knew that

I was

taking a risk by eating it, but also felt like I had to because I needed another

food.)

After I made the bacon, I drained the fat but did not wash the pan. I peeled a

zucchini and

fryed it in the small amount of remaining bacon fat. (Prior to this I did not

like zucchini,

so it was a good idea for me!)

By the way, I cooked the bacon in both a cast iron skillet and in a regular

skillet, and it

tasted better from the cast iron skillet.

Avocados are a good source of fat so that will help keep you feeling full. (and

the healthy

fat will be so good for your baby).
