Guest guest Posted April 28, 2006 Report Share Posted April 28, 2006 I tried pecan flour on my son last night and we had a return of the red cheeks and I ended up having to give him Claritin this morning! He had one " cupcake " using pecan flour and a muffin recipe- I was experimenting to try to make a chocolate looking cupcake. He also had two pecan flour based cookies from Digestive Wellness. Either way, pecan flour was the only new thing yesterday and of course I ordered a pile of it! Well, I did try to make the " cupcakes " egg free and used the fish based gelatin, but I'm pretty sure he's had that before OK... Only 1 container of dates came in, not enough to experiment with the 14 date cake recipe for tomorrow. But, I may be able to use them to make the cake look more brownish. I would like to try the banana cake recipe in BTVC. Someone told me it worked well for them. For those who have made it- what size cake pan did you use for one recipe of it- the book doesn't give a size? I would like to use two round cake pans to layer and I guess I would use the honey icing recipe in BTVC. Should I double the recipe or does the recipe make 2 layers already? Got lots of bananas and eggs to experiment. Thanks! Guest guest Posted April 29, 2006 Report Share Posted April 29, 2006 Oh, that cake is a favorite in our house. I use a pie plate usually, or the recipe makes 12 cupcakes. I also add another 1/2-1 banana, gives it a more " sweet cake " taste. If you want two layer of a round cake, double it. Guest guest Posted April 30, 2006 Report Share Posted April 30, 2006 Hi Dawn! I made the cake yesterday and it was a success! I used two mini round cake pans to make a little layer cake. Next time I will do as you say and try adding a bit more banana. I couldn't taste it because I can't eat eggs, but hubby and his grandma both said it was delicious! And of course, my son loved it! The icing was interesting. I guess maybe I was expecting fluffy white, but honey just isn't gonna turn anything white I guess! I beat and beat and beat and it was still kind of thin. A lot like melted marshmallow only thinner. Very very sticky! I just spread/drizzled it between the layers and on top and around the sides. Some of it soaked in, some of it stayed- it had an overall glossy look to it. Still worked! Last year my son had a fruit platter with a candle stuck in it, so this was a huge exciting thing for him to have a " real cake " ! I will definitely make the cake recipe again!
