You could mince up veggies and put it in the ground meat with spices and pureed onions or avocados to make it less dense. If you don't like the look of the balls, you can flatten it slightly and get miniature patties. You can put the little patties between two slices of cucumber if you can eat raw veggies. There are guacamole recipes on the scd recipe sites. You could serve that with veggies. Or shrimp stuffed mushrooms. Or how about shrimp wrapped in SCD bacon or just plain served with a butter sauce. Did you receive Carol's tuna salad recipe? The avacodo chicken from pecanbread is really good, maybe put it on peppers, celery, mushrooms, etc. Not to offer advice about other diets, but if you look really close and adapt a little it seems that some of the raw food cookbooks have some adaptable recipes, if you are to raw food yet. You can use the peeled stalk of the broccoli, or just nuke some frozen broccoli - cook it well. Then throw it in the blender with some oil, a clove of garlic, and add lemon juice and salt to taste. That's it! It's a yummy dip, and you can also use it for a cold soup. We don't actually, since Tom is pretty sensitive to garlic, but I eat it as a veggie dip. Guacamole's out too - after 6 months of avocado smoothies he developed an allergy to avocados. It's tough, with such a limited diet, let me tell you. I haven't done well with pork for a long time either, but I just bought some pork from her (they are a special heritage breed,) I'll let you know how it goes. It is very interesting, I was honestly done to just eating fish, and not doing too well with that, until I started making sure the only meat I ate was farm meat................I'm slowly begining to tolerate more and more things. I think the ostrich is fed some grain, but we have seen no reactions. The elk is free-range. We also eat buffalo which is free-range, and lamb, which can only graze. It's the deer equivalent of Mad Cow Disease, and there is no screening for it, no testing of deer meat like there is (at least occasionally) for cows, and you don't know you have it for decades. Elk does not have that problem.
