Portebella Giant Mushroom Caps

Hi guys, does anybody have suggestions how to prepare these giant

mushrooms? I bought them because they looked good and interesting,

yet can not find a recipe. WE are doing OK with mushrooms these days

and would like to try these. Any suggestions on how to cook them SCD

are much needed.

Antoinette,

Look online or in a regular cookbook on how to roast the mushrooms.

After roasting them, I take them out of the oven and stuff the centers

with a spinach, sausage, tomato sauce mixture.

VERY yummy!

That sounds truly good! Will try. I always forget to look at

my " old " cook books! What a concept...a " regular " cook book!

thanks for reminding me...will go now and see. This is what we are

having for Dinner!

" regular " cook book! "

We use our " regular " Better Homes and Gardens cookbook quite a bit.

Those big cookbooks have a ton of information besides recipes in them.

Things like how long to cook turkeys, chickens, the internal temp,

etc. And some of the recipes are actually pretty easy to make SCD-style.

We grill them lightly and use them for burger buns. Very yummy.

This is an excelent idea for the use of these big guys!

Another would be to use it as a pizza crust...even if you can't eat

the cheese yet.

Hi:

They are really good with havarti cheese slices. If you have a convection

oven, bake first then broil the cheese on top. It does taste like pizza. A

little high in glutamate, though. Might want to serve it with swiss chard salad

and any type of melon.

We used them to make Pizza and used goat cheese for the first time and

no one yet is having trouble. YEAH!

It was so very good. Pust on homemade suagage and cauce and cheese.

It was a real treat. WE are going to buy these guys again. Someone

said to turn them into " buns " after grilled for hamburgers. We will

do this next. Mushrooms are very high in B vitamins. So we like to

eat them often.
