Guest guest
Hi, I'm new here. Not new to gluten-free (dx Celiac 4 years). I've got the BTVC and Grain Free Gourmet, and am so excited about this all. I ordered a yogurt maker and starter but have questions on the milk to use. Does it matter what kind? To be SCD legal should I get raw or pasteurized, or ultra-pasteurized, Organic or what? Does it need to be lactose free? Is Organic Valley brand OK to use? I want to use goat milk if I can. Is powdered goat milk OK? I've looked everywhere for which milk and can't seem to find answer. I'm so anxious to get started so any help is greatly appreciated. Thanks, Jan
Guest guest
Dear Jan, Since we " pasteurize " in the process of making the SCD yogurt either is OK. Lactose free will not work, no lactose for the starter to " eat " , and thus no fermentation. Goat milk is easier to digest than bovine. But when the gut heals either are great! Fresh tastes better over powder. If you use the powder reconstitute it according to directions, do not add more. We only trust organic with no hormones and antibiotics added. Hope this helps, Antoinette (scd 2/06 celiac and children with ASD)
Guest guest
Hi Jan.... and welcome. You asked: <<questions on the milk to use. Does it matter what kind? To be SCD legal should I get raw or pasteurized, or ultra-pasteurized, Organic or what?>> Organic is your choice. Doesn't have to be organic to be SCD legal. Any commercial milk you find will probably be ultrapasteurized. It works. Raw milk is great, if you can find it. You basically pasteurize it when you go through the yogurt making process. Some swear by raw milk, but it's not a requirement. <<Does it need to be lactose free?>> NO... in fact, lactose free milk will NOT work to make yogurt. The little yogurt fairies need to feed on the lactose in the process..... they use it all up in the 24 hour fermentation time. <<Is Organic Valley brand OK to use?>> Yes. <<I want to use goat milk if I can. Is powdered goat milk OK?>> Hmmm.... I think the powdered goat milk by Meyenberg is okay, but am not sure. Hope someone else can answer that. I know that you would have to be sure to constitute it correctly... not add any extra milk powder. Patti, interim list moderator
Guest guest
I really want to do this right. Is Non-fat ok? And what about the liquid evaporated? I have to go to the city to get the milk so thinking powdered or evaporated, but maybe I can take a ice chest to keep it in. And what is ultra-pasteurized? Thanks! Guest guest
I use whole milk and/or half and half. The less milk fat the more sour the yogurt. Ultra Pasturized means nothing is left in it.
