Take out the seeds if they have become hard, but if not, the center with the seeds can be used too. Fill the blender about 1/3 full and add a small amount of water. Liquify in blender. It takes a few minutes, but soon you will see a thick white zucchini milk. I used to use this years ago when dairy free, but I can't remember any good recipes for it. I guess I'll have to experiment again. I do have a small cook book with zucchini recipes in it, (including zucchini milk), so when I have more time I will look and see if there is anything compatible with scd in it. I assume it must be cooked? Before the blender, or after? Do you need to strain it? How is it for cooking? How would you adapt a recipe to use it? Could it be used as a formula base, say with oil and honey? Do you know anyone who has used it this way? One of my sources is a ative Extiension Service booklet called " Zucchini Recipes " . I wonder if this is still available. I could look into it. Hope it helps a little! Here's one recipe that could easily be adapted by substituting SCD muffin cubes for bread cubes: 2 c. zucchini milk 1 1/2 c. bread cubes 1/4 c. honey 1/4 tsp. salt Butter 2 eggs, slightly beaten 1 tsp. vanilla 2 tbsp. cinnamon 1/2 c. raisins Bring zucchini milk to boiling point, pour over bread cubes. Add butter. Combine honey, salt and beaten eggs. Add to mixture. Add vanilla, cinnamon and raisins. Pour into a greased casserole dish. Guest guest Posted March 31, 2006 Report Share Posted March 31, 2006 Since we too are new to SCD and now realize that we have a problem with salicylates/phenol sensitivity (zucchini is high), I don't think we will be trying it any day soon. Salicylates can cause aggression and irritability and we don't need any more help in this house. Plus everything is better tolerated cooked in this house...and this recipe is raw zucchini....cubes with water blended. Think we will wait on it until the gut heals and the salicylate problem that goes along with a damaged gut, goes away with healing also. I'm not sure it would work very well as a drink. I'm curious to see if anyone has had any luck with this.
