Because these companies are not going to get it..... and here is something I wanted to share that we learned after making MANY exhausting phone calls last year...it is very disappointing so get ready: Would you believe that i was constantly saying SCD was gluten free without also realizing the importance of being STARCH free where specified on our diet until Elaine explained that I had been flying blind for too long and it was high time I learned the difference. I never forgot after that. Starch in your collars, O.K., in your tummy? NOT!. You may note that gluten is sticky stuff. It makes bagels distinctive. They have an elastic dough. GF breads that are labeled Gluten Free use potato starch and rice flour to attain volume. To be safe, use what is specified on SCD and don't spin your wheels with the rest or what was before ----just get it out of your life. One year after the last symptom is gone you may want to try a small amount and decide if you really had to give up anything that was so special. Once I started making crackers out of cheese, I stopped missing flatbread. Jodi also taught us to make good crackers but i never bothered. When I think " gluten " , which is almost never, I visualize " glue " sticking my poor intestines together. Carol F. Beleine's sea salt from France is legal (at Whole Foods and supermarkets) Kosher salt is legal, coarse but disolves just like regular salt. Nothing is added) Carol F.
