I make non-dairy yogurts, and use the gelatin as it greatly improves the consistency of the yogurt. I can assure you that the probiotic effect is still there... ................................ Hey guys, The reason to why I have had all this confusion about gelatin in the yogurt is due to receiving a sheet with my yogurt maker from Lucy's Kitchen Shop saying: " Do not add gelatin or powdered milk to a yogurt batch (as suggested in the instruction manual for the Yogourmet yogurt maker " . I knew the powdered milk was a no no....but didn't understand about the gelatin....When no one had an answer here....I called Lucy herself just now, and she said this (gave me permission to quote her by the way): ''The way you know if a batch flops is if it does not set up, if you used the gelatin you will not know if the process worked right, because it will set up no mater what .... a few years ago I had a few batches that would not set up, still don't know why. If I had used Gelatin I wouldn't have caught this problem. " Lucy from Lucy's Kitchen Shop So here it is the Gelatin mystery solved, she said go ahead and use it....but it's a safety per-caution not to. If you do want to use the gelatin you put it in the cold milk before you bring heating it up. Warm Regards, Antoinette (one plus months entire family SCD/CD, DH, ADD,ADHD,ASD and healing!)
