Maltodextrin is a carbohydrate derived almost exclusively from corn starch

and not malt (barley). It is used to improve texture and aid in mixing. It

is unlikely to contain gluten...although as always, checking with the

manufacturer on it's source is still the only way to be 100% sure.

Here's a definition from www.healthychoice.com

" Maltodextrin is a complex carbohydrate and used as a fat replacer.

Maltodextrins are formed when large starch molecules are split into smaller

pieces by the action of acid, enzymes or heat. Maltodextrin helps provide

the same texture to fat free or low fat items that fat provides to the

original product. It also provides bulk. Unlike some fat replacers,

maltodextrin does contain calories. However, because it has less calories

than fat, the modified product is usually lower in calories than the full

fat item. Maltodextrins are used widely in almost every category of

reduced-fat food. Maltodextrins, along with other fat replacers, have made

it possible to develop a wide variety of fat-modified products that

maintain a smooth, creamy texture and pleasant flavor. "

Hi,

I knew that I was allergic to wheat, but recently discovered that I am

allergic to gluten(plus I am allergic to yeast and dairy). So, I am

in the process of weeding out the gluten from my diet (this is very

frustrating). I am 31 years old and want to have a baby, but i am

having difficulty. I have heard that gluten allergies can contribute

to this. My specific question is what is maltodextrin and is it bad?

The reason why I ask is that I used Walden farms sugar free carb free

syrup and I had some stomach problems that afternoon. I am trying to

see if it was linked to the syrup or not. So, i looked at the

ingredients and the only thing that looked odd was this ingredient.

Supposedly, this syrup is gluten free.

Any ideas?

Maltodextrin is one of the worst things you could ingest according to Elaine. I

don't remember the exact reason, but I think it had to do with the structure of

it . . . nearly impossible to break down?

I think you can find this information on the Breaking The Vicious Cycle Website

under illegal ingredients. The explanation is there.
