" Is there a recipe that would work good to replace short cake? " Well, it's not going to be anything spectacular. I've gotten some Just Blueberry juice and I am going to make blueberry gelatin and cut it up into squares. Then I'm going to put them in a parfait glass and put fresh blueberries in with the gelatin and put the " whipped cream " on top and let it run down in between the gelatin squares and the blueberries. To replace a short cake, I'd probably use the carrot (cashew) cake on pecanbread.com. When I made it, it came out like a yellow cake. I have some strawberries... I might make the carrot cake too. Maybe. Holidays can be a real pain in the neck. I'd prefer to stay home and all of us eat a nice big SCD meal and then go to the relative's. But they seem to be offended by this. I always have to pack an entire meal for both boys, then contribute to the pitch-in dinner as well. Oh well. My one married son and his wife and family will probly not be coming. His wife does not deal well with our present diet and I have mandated that it will only be SCD legal foods in our home. I guess I figure that the food is good and they are adults. My kids are 5 and 6. They should not have to be made to make those choices in our home. I don't have to worry about going there as she says that it is way to much work for her to have everyone there. That is fine with me. I cook and I have the say as to what is cooked.
