Can someone explain why this is happening..What is the more fluffy bread..is it the one with soda in it..LOL.. I can't remember because I made doubles.. Is it the way the four is ground? I haven't noticed nuts being any different from each other. Guest guest Posted May 15, 2006 Report Share Posted May 15, 2006 the baking soda actually creates a gas in the batter that will sort of help with rising. also egg whites that are whipped will make a bread lighter cause once again you have shoved gas into it (air gets trapped in the egg whites when you whip). and i would guess it is the egg to nut flour ratio in some cases. these are all guesses but i think it is true. it may also be true that those things made with nut butters might be denser than those made with nut flour just cause of the air between the particles. donna > > > > Anyone know answer??????????? > Just a guess--number of eggs? > , mom to > Quote Link to comment Share on other sites More sharing options...
