So far he hasn't really eaten ANY pancake recipe I've tried (nor waffles) because of looks. They all get too dark in order to flip them. He also doesn't want to try the cashew butter bread (which, btw, I think will work minus honey, oil, AND cinnamon for a sandwich bread) because all the breads cook dark due to the honey and nuts...even though previous to this diet, we were using whole wheat bread for our sandwiches. Guest guest Posted March 30, 2006 Report Share Posted March 30, 2006 It always took longer when I made them this way but... I noticed that my first pancakes were much prettier than the last ones. So I would do one round then let the pan cool, do another, let the pan cool, etc My son is also allergic to eggs so I ususally used applesause. They don't stick together well though. If they started to look really bad, I would just mix them all up, put them in a bowl and it was warm ceral (of course it would have to cook more if you used eggs.) andrea > > These always come out ugly. Guest guest Posted March 30, 2006 Report Share Posted March 30, 2006 The SCD pancakes are not cooked on high heat like wheat flour pancakes. You'll need to turn the heat down to about medium. It will take a while for them to cook. SCD pancakes aren't " fast " . Sorry. But you can get them to come out looking like regular pancakes. The banana pancakes, chicken pancakes, sneaky veggie pancakes, midas gold, mixed nut... you name it. Just cook them on medium and be patient. But the Mickey or Pooh waffle makers work too. They are mostly like shaped pancakes rather than the deep wells of a belgian waffle maker. They make fun slices of " bread " as well. Several people have asked about a bread that can be sliced for sandwiches. We've always just used pancakes for sandwiches. Banana pancakes or sneaky veggie pancakes used for peanut butter/nut butter sandwiches. Mixed nut pancakes for chicken salad. Chicken pancakes for a veggie sandwich (guacamole spread on the inside). When I make pancakes for each one: 1/4 cup nut flour or two tablespoons nut butter 1 extra large eg1/4 teaspoon baking SODA 1/2 teaspoon vanilla 1 tablespoon or less honey butter for the pan You can try chilling th batter for a while too before you cook it.
