Since we use baking soda, any SCD cracker recipe without dairy will do for

matzoh. baking

soda is not concidered leavening.

Matzah, by definition, has to be made out of grain. In fact, for

Passover, just grain and water. Anything else you make will be symbolic

only. The halachic (Jewish law) obligation to eat matzah throughout

Passover is only at the seder(s), prescribed amounts and times. Anything

else you make that's crunchy and serves the same food purpose (for

spreads, etc.) is for you own pleasure. And enjoy!

I have a discussion from the LongIsland listserve about what Elaine wrote

to someone who wondered if he should jeopardize his diet to fulfill the

seder night obligations. (Whoever is interested, please contact me

offlist and I'll be happy to send it to you.) YMMV, and I would recommend

consulting a rabbi whose judgment and scholarship you value. With very,

very few exceptions, the obligation to preserve one's health is usually

paramount, but as an observant Jew I do not set the parameters myself but

consult a rabbi. There is gluten-free matzah available, and while we all

know that gluten-free isn't worth much, it may minimize any possible

harmful effects that eating grain matzah would have.
