Here are the ingredients from Bob's Red Mill: Sodium Phosphate, Bicarbonate of Soda, Corn Starch and Calcium Phosphate. So, Bob's Red Mill uses corn starch as their starch. As for brands of baking soda... To my knowledge as long as the box just said baking soda, it should be fine.
